Chili-Spiced Sweet Potatoes

This easy-to-make orange and chili-spiked mixture is a refreshing twist on typically heavy potato dishes. Low in fat and high in fiber, the complex carbohydrates of sweet potatoes along with the blood-sugar stabilizing spices are a great nutritional combo, and the bright flavors will make this dish a requested tradition.
Ingredients
4  sweet potatoes
1  orange (Use half of the juice and zest)
2 tbsp brown sugar
2 tsp ground cinnamon
1 tsp chili powder
1⁄4 tsp salt
Instructions
Preheat oven to 425°F. Wrap sweet potatoes in perforated foil and place on a baking sheet. Bake the sweet potatoes for about 70 minutes, until they are soft. Remove sweet potatoes from the oven and allow them to cool slightly.

In a small bowl, whisk together orange juice, orange zest, brown sugar, salt, cinnamon, and chili powder.

Scoop out the insides of sweet potatoes and place them in a large mixing bowl. Pour orange juice mixture over sweet potatoes, mash well, and serve.
